Crookie the famous croissant cookie or Crocookie with chocolate chips and pecans that has made the Buzz on social networks including Tiktok and Instagram. This delicious mix between the pure butter croissant and the cookie dough is a creation of Stéphane Louvard chef baker.
INGREDIENTS
8 croissants or pains au chocolat, homemade or store-bought
120 g of semi-salted butter
100 g whole muscavado sugar or coconut sugar
50 g white sugar
1 large organic egg
210 g of T55 flour
1/3 tsp fine salt
1/2 teaspoon baking powder
2 g of baking soda
1/4 teaspoon vanilla powder or 1 packet vanilla sugar
180 g of 3 chocolate chips or chocolate cut into small pieces
60 g pecans optional
