Coconut Sugar Cookie Cups with Fudge Filling

Delicious coconut sugar cookies cups are filled with a simple chocolate filling and topped with toasted coconut.

Coconut Sugar Cookie Cups with Fudge Filling... YUM!

INGREDIENTS

Cookie Cups

1 3/4 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
3/4 cup sweetened shredded coconut
3/4 cup unsalted Challenge butter 1 1/2 sticks, room temperature
3/4 cup sugar
1 egg
1 teaspoon vanilla extract
1/2 teaspoon coconut extract

Fudge Filling

2/3 cup semi-sweet chocolate chips
1/3 cup heavy whipping cream

INSTRUCTIONS

Preheat oven to 350°F.
Prepare a standard sized muffin tin by spraying with non-stick spray, or moistening a paper towel with oil and wiping the inside of each cup.
In a medium sized bowl, add flour, salt, baking powder and coconut, and set aside.
