Ingredients
1 cup all-purpose flour
1/4 tsp. salt
1 tsp. baking powder
4 large eggs, separated
3/4 cup sugar, divided
1 tsp. vanilla extract
1/2 tsp. coconut extract
1/3 cup water
3 Tablespoons powdered sugar (to dust towel with before rolling cake)
Frosting
2-1/2 cups shredded, sweetened coconut
2 (8 oz. each) packages cream cheese, softened
1-1/2 cups heavy cream
1 cup sugar
1 teaspoon coconut extract
