Chocolate Bavarian: the recipe for a delicious and sophisticated dessert

How to make chocolate bavarois

Step 1
Collect the chopped dark chocolate in a heavy-bottomed saucepan, pour in the milk1and melt gently over the fire; then turn off the heat and set aside.

Whisk egg yolks with sugar and vanilla extract in a bowl2.

The end result should be a loose and foamy mass3.

Combine the beaten egg yolk with the melted chocolate4 and mix thoroughly.

Put it back on the stove and let it cook, stirring constantly with a whisk, until it reaches a temperature of 82 °C.5.

Remove from the heat and add the previously soaked and well squeezed gelatin6.

Mix well to dissolve7and let cool.

As soon as the mixture is lukewarm, add the semi-whipped cream to the chocolate cream.8Mix carefully with a spatula and with movements from bottom to top.

Transfer the mixture into a fluted mold9, previously moistened.

Place in the refrigerator and allow to harden for at least 4 hours10.

When pouring out the Bavarian cream, dip the mould briefly in hot water11.

Turn the mold upside down on a serving plate and decorate the dessert with some fresh raspberries12.
