Chicken curry stuffed buns (Wells)

Ingredients: For 12 Wells

For the dough:
170 ml of lukewarm milk
4 tablespoons olive oil
1 egg
125 g of fromage blanc or plain yogurt

1 teaspoon of sugar
1 teaspoon of Guérande salt
15 g of fresh baker’s yeast or 6 g of dehydrated yeast
1/2 teaspoon dried oregano
500 g of T55 or T45 flour

For garnish :
2 onions
1 red pepper
3 cloves of garlic
600 g chicken breasts

1/2 teaspoon turmeric
1/2 teaspoon ginger
1/2 teaspoon cumin
1/2 teaspoon sweet pepper
1 to 2 teaspoons of curry powder

Salt and pepper
3 tablespoons olive oil
180 g of crème fraîche
3 tablespoons grated cheese (gouda or emmental)

1 to 2 balls of Mozzarella
4 square or rod-shaped processed cheeses (Laughing Cow)
2 tablespoons parsley
1 egg yolk + 1 tbsp. milk for glazing
