Ingredients :
For the dough:
60 g flour
20 g cocoa powder
3 eggs
1 pinch of salt
70 g sugar
10 g vanilla sugar
For the filling:
350 g ricotta cheese
100 g soft butter
50 g powdered sugar
10 g vanilla sugar
150 g cherries in syrup
For decoration:
80 g dark chocolate
80 g butter
50 g filling
chocolate flakes
candied cherries
Preparation :
1. Whisk eggs with salt, sugar and vanilla sugar.
2. Sieve the cocoa powder and stir in.
3. Pour the dough into a tray lined with baking paper and flatten with a spatula.
4. Bake in a preheated oven at 190° for about 10 minutes.
5. For the filling: Mix butter, ricotta, sugar and vanilla sugar in a bowl and stir all ingredients into a smooth cream.
6. Refine the cake with a knife and brush with cherry syrup.
