Put all the ingredients for the dough in a mixing bowl and knead a smooth and soft dough with a mixer with dough wires. Divide into 4 parts, wrap in nylon foil or bags so that it does not dry out and leave for half an hour in the fridge.
I bake this kind of crust that is baked on the back of the pan in this way. In this case, I used a tray whose bottom dimensions are 21×30 cm.
Put one end of the baking sheet on a damp kitchen towel so that it does not move when stretching the crust, sprinkle it with flour, put the dough, sprinkle it with flour, then gently stretch it into a thin crust, if necessary sprinkle a little more flour.
