Caramelized Banana Oatmeal

This caramelized banana oatmeal is creamy, delicious, and only takes about 15 minutes to make. Just the thought of this is enough to get me out of bed in the morning! It’s vegan, gluten free, and refined sugar free.

Ingredients

OATMEAL:

▢1 cup rolled/old fashioned oats
▢2 cups non-dairy milk I like soy or almond
▢1 teaspoon vanilla extract
▢½ teaspoon cinnamon
▢⅛ teaspoon salt

BANANAS:

▢2 bananas sliced into disks
▢1-2 tablespoon refined coconut oil
▢2 tablespoon maple syrup plus more for topping, if desired
