Cake with plums and crumble



320 g wheat flour (2 cups)
5 yolks
16 g of vanilla sugar
60 g of powdered sugar
220 g of cold butter
1 tablespoon of baking powder


5 egg whites
1 tablespoon of potato flour
200 g of sugar
pinch of salt


12 plums


Sift the flour, add egg yolks, powdered sugar, baking powder, vanilla sugar and cold butter cut into cubes. Knead everything into a uniform dough and divide it into two parts. Wrap one of them in foil and put it in the freezer. Roll out the remaining dough and place it on the bottom of a 20Γ—30 cm baking tin, previously lined with baking paper. Prick the dough with a fork, put it in the oven preheated to 175 degrees and bake for 12 minutes.

Beat the egg whites with a pinch of salt until fluffy. While still beating at high speed, gradually add sugar. Mix until you obtain a glassy foam. Finally, add potato flour and mix until the ingredients are combined.
Wash the plums, dry them, cut them in half and remove the seeds. Place the plum pieces on the baked base. Pour the egg white foam onto the plums.
