Cake with fruit jam, like at grandma’s home – Tasty and aromatic cake, tender and crumbly

preparation:

Mix the butter with a pinch of salt for 1 minute. Add the castor sugar, the vanilla, the egg and mix at high speed for 2-3 minutes until you get a whitish, homogeneous and fluffy composition. Gradually add the sifted flour together with the baking powder: start with the mixer, then work with the spatula and finally gather and knead the dough with your hands. We must obtain a homogeneous, smooth, soft dough that breaks easily into pieces.
Transfer the dough to a piece of baking paper and roll it out into a 5 mm thick rectangle, 30-35 cm. while we spread the dough, we arrange its edges with a scraper.
We transfer the top, including the baking paper, onto a tray. Prick the top with a fork and put the tray in the oven preheated to 200 degrees for 10-12 minutes or until the edges are browned.
After baking, smooth the edges of the still hot top using a sharp knife. We cut it in half and let it cool.
We put the remaining pieces after uniforming in a plastic bag and crush them with the rolling pin until we get crumbs.
Assembly: fill the tops with jam, leaving the edges free. Grease the top with jam and sprinkle the crumbs on top. We leave the cake aside for 2-3 hours, at room temperature, after which we can portion it and serve.
