Baked meatballs: the recipe for the light and delicious version

Step 1
Gather the bread in a bowl and moisten it with milk1.

When it is completely soft, squeeze it to remove excess milk and mash it with your hands2.

In a large bowl, mix the minced meat, chopped garlic and parsley, grated Parmesan, bread, a pinch of salt, nutmeg, pepper and finally the egg3.

Knead the ingredients with your hands until you get a homogeneous mass, then take portions and form meatballs of the desired size4.

Place on a baking tray lined with baking paper and add the rosemary sprigs5and pour the stock, oil and white wine on the bottom.

At this point, cook in a preheated static oven at 190°C for 25 minutes; after 15 minutes, drizzle the meatballs occasionally with the pan juices and shake the pan gently to ensure even browning. For a super crispy result, turn on the grill for the last 5 minutes6.

Transfer to a serving bowl and serve the baked meatballs hot7.
Advice
If you want, you can refine the dough with other aromatic herbs such as peeled thyme, sage and mint to give it a pleasantly fresh note; for a more lively touch, you can also use curry, cumin or your favorite spices or a pinch of chili.
Once cooked, it is advisable to eat the baked meatballs immediately : the next day, in fact, there is a risk that they will be too dry. Alternatively, you can form meatballs and freeze them raw for up to a month , placing them slightly apart in an airtight container.
