Baked egg bread: the recipe for delicious and waste-free croutons

Baked egg bread is an inexpensive and waste-free recipe that is ideal to serve as a starter or aperitif . Also perfect as a dinner-saver idea, along with a platter of mixed cold cuts and a portion of grilled vegetables, it can be prepared in just 20 minutes with a few simple ingredients.
To prepare it at home, simply mix the eggs previously beaten in a bowl with the grated Parmesan and a pinch of salt, with the diced scamorza and the fresh stracchino , then pour the mixture obtained on the slices of stale bread soaked in a bowl, add a drop of milk, spread on a baking tray lined with baking paper and bake everything at 180 °C until golden brown.
The result is fragrant, stringy and creamy crostini, which can also be enjoyed as a savory snack in the company of the whole family.
We used a classic stale bread , but depending on personal preferences you can also opt for a wholemeal bread, a rye bread or baguettes from the day before.
If you want, you can replace the stracchino with robiola or squacquerone, or instead of scamorza you can choose another stretched curd according to your taste, such as provola, emmental, fontina or taleggio.
For a special touch, you can season the croutons with a little anchovy sauce. For a quicker and easier result, you can simply dip the slices of bread in the beaten eggs, then place them on a baking dish and finally season with a sprinkle of Parmesan cheese or mixed aromatic herbs .
