The apricot tart Tatin is the summer version of the classic Tarte Tatin, the famous dessert with apples of French origin: a quick and delicious cake, baked “upside down”, perfect as a snack with a cup of espresso or to take to the table at the end of the meal at a dinner with special guests.
To prepare it, start with the shortcrust pastry, made by quickly mixing the flour with the cold butter in pieces, the ice water and a pinch of salt in a bowl; Once it has set in the fridge, simply pour a sauce of butter and caramelized sugar on the bottom of a baking tray lined with baking paper, spread the halved and pitted apricots on top and then cover everything with the pasta, rolled into a very thin sheet. Baking in the oven does the rest, slowly candiing the fruit and producing a delicious dessert that can be turned out onto a serving plate while still hot and sprinkled with flaked almonds if desired.
In this recipe we have used a round dish with a diameter of 20 cm, but nothing prevents you from making the Tarte Tatin in a mini version : you will get lots of small single-serving tarts, ideal for placing in the dessert corner of a party buffet or for the little ones for a delicious and authentic break.
Making brisée at home is really easy and possible for everyone, but if you want to reduce the preparation time even further, you can buy a pre-packaged roll or, alternatively, replace it with a savory pastry or a crazy pastry, even lighter and lighter without butter.
