The apple strudel cake is a dessert from the cupboard of the famous apple strudel, the typical South Tyrolean pastry speciality, prepared from a wafer-thin dough, richly filled with apples, pine nuts and raisins.
Delicious, fragrant and with a pleasantly moist core, it is perfect for breakfast and snack with a cup of hot infusion or to bring to the table at the end of the meal with a scoop of vanilla ice cream. . a>
The dough is similar to that of apple pie but is made very soft by the addition of ricotta . It is made by beating the eggs with the granulated sugar using an electric whisk and then adding the seed oil, the dairy products, the well-drained whey, the flour, the baking powder, the milk and the typical strudel ingredients: raisins in rum , small pieces of apple and pine nuts.
Spread everything in a well-buttered and floured mold and then sprinkle on the surface with other dried fruit, a pinch of cinnamon and a sprinkle of brown sugar: the result is a fragrant dessert, slightly caramelized on the outside and very soft to the bite, which will delight both adults and children.
If you prefer, you can enrich the preparation with dark chocolate chips , dehydrated blueberries and flaked almonds, if you don’t like it very much, you can use cinnamon. You can add the seeds of a vanilla pod, the grated peel of a lemon or a pinch of ground cardamom.
If you like, you can replace the rum with a liqueur of your choice or simply soak the raisins in warm water. Instead of mascarpone, you can also use ricotta or another spreadable cheese, or you can macerate fresh fruit in orange juice.
