Remove from heat and let cool
Preheat the oven to 375° and line a baking sheet with parchment paper. Set aside.
On a lightly floured surface, roll pie crust out smoothly.
Spread cooled apple mixture over pie crust in an even layer.
Roll the second pie crust out on a lightly floured surface and slice pie crust into thin strips.
Place the strips in a lattice pattern over the top of the apple filling.
Using a round cookie cutter or biscuit cutter, cut out “cookies” and place on the prepared baking sheet.
In a small bowl, whisk egg and water together. Brush egg wash over the top of the cookies and sprinkle with coarse sugar.
Bake for 15 minutes, or until cookies are golden brown.
