To begin, prepare the dough by mixing the flour and butter until you obtain a sandy consistency.
Then add the egg and mix.
Form a ball. Reserve 30 minutes.
Meanwhile, prepare the filling, mix the flour and sugars in a bowl.
Add the fromage blanc, heavy cream, milk and egg yolks.
In another bowl, beat the egg whites until stiff using a whisk.
Then, combine the egg whites with the fromage blanc mixture.
Transfer the dough into a tart mold measuring 28 cm in diameter and 6 cm high.
Should fit up to the edge of the mold.
Cooking is done in 2 stages: 30 minutes at 180°C then 60 minutes at 155°C
Remove from the oven, invert the tart onto a rack and let cool.
Then, sprinkle with icing sugar.
Taste the Alsatian cottage cheese tart.
