Speculoos slices

Ingredients

Dough:
120g sugar
120g flour
1 pinch of salt
3 eggs
2 teaspoons of baking soda
Apple compote:
1 kg apples e.g. Elstar
50g sugar
2 tbsp vanilla sugar
300 g apple juice
1/2 lemon, juice of it
1 pack vanilla pudding
1/2 teaspoon speculoos spice
Aside from that:
600 g cream, cold
3 packs of cream stiffener
approx. 20 speculoos cookies

that’s how it works
Preheat oven to 180 degrees O/U. Prepare the stone with a rim or baking tray and place a baking frame on it.
Insert the mixing attachment into the mixing bowl. Add eggs, salt and sugar. Beat for 2 minutes/50 degrees/speed 3.5 and then
without temperature for another 10 minutes/speed 3.5 until creamy
Add the flour and baking powder to the mixing bowl and fold in for 4 seconds/speed 3.
Spread the dough on the stone/tray and bake for about 15 minutes.
Let the sponge cake cool down.
Peel apples and cut into pieces.
Add apple juice, sugar, vanilla sugar and pudding powder to the mixing bowl.
