With this recipe for yoghurt cake without flour you can create a light, tasty cake that delights on every occasion and offers a healthy alternative to traditional cake recipes.
INGREDIENTS
Zest of a large organic lemon,
pulp of a vanilla pod,
1 teaspoon of cream of tartar,
5 eggs,
120 g of xylitol or another sugar substitute,
500 g of Greek yogurt,
100 g of pudding powder
INSTRUCTIONS
Preheat the oven to 180 degrees top/bottom heat and prepare a baking pan with baking paper.
Separate the eggs and beat the egg whites until stiff. The egg yolk is then mixed with the sugar substitute until creamy.
Add the yogurt, vanilla and lemon zest to the egg yolk mixture. Mix the cream of tartar with the pudding powder and fold it into the mixture.
