Ingredients
- 120 g of margarine or butter
- 120 g of sugar
- 1 vanilla sugar
- a pinch of salt
- 1 egg
- juice and zest of one lemon
- 250 g of soft flour
For coating:
- 250-300 g of lemon curd {lemon cream}
For the top layer:
- 4 eggs
- 150 g of sugar
- 80 g of ground walnuts
- 70 g of coconut + 10 g for sprinkling on top
Preparation
Beat the margarine at room temperature until foamy with a mixer with sugar and vanilla sugar. Add salt and egg and continue beating until all the sugar dissolves and you get a nice foamy mixture. Then add the juice of one lemon and some grated zest.
At the end, add flour and mix everything well with a mixer into a homogeneous mixture. You will get a thicker and sticky mixture. Note: This recipe does NOT include baking powder .
