Lemon bars with coconut and walnuts

Ingredients

  • 120 g of margarine or butter
  • 120 g of sugar
  • 1 vanilla sugar
  • a pinch of salt
  • 1 egg
  • juice and zest of one lemon
  • 250 g of soft flour

For coating:

  • 250-300 g of lemon curd {lemon cream}

For the top layer:

  • 4 eggs
  • 150 g of sugar
  • 80 g of ground walnuts
  • 70 g of coconut + 10 g for sprinkling on top

Preparation

Beat the margarine at room temperature until foamy with a mixer with sugar and vanilla sugar. Add salt and egg and continue beating until all the sugar dissolves and you get a nice foamy mixture. Then add the juice of one lemon and some grated zest.

At the end, add flour and mix everything well with a mixer into a homogeneous mixture. You will get a thicker and sticky mixture. Note: This recipe does NOT include baking powder .
