Lemon Zucchini Cake Recipe!

Ingredients:

For the cake:

– 2 cups all-purpose flour

– 1 and 1/2 teaspoons baking powder

– 1/2 teaspoon baking soda

– 1/2 teaspoon salt

– 1/2 cup unsalted butter, softened

– 1 and 1/2 cups granulated sugar

– 2 large eggs

– 1/2 cup vegetable oil

– 1/2 cup buttermilk

– 1 tablespoon lemon zest

– 2 tablespoons fresh lemon juice

– 1 teaspoon vanilla extract

– 2 cups grated zucchini

For the glaze:

– 1 cup powdered sugar

– 2 tablespoons fresh lemon juice

👩‍🍳 Instructions:

1️⃣ Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

2️⃣ In a mixing bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

3️⃣ In a separate mixing bowl, cream together softened butter and granulated sugar until light and fluffy.

4️⃣ Beat in eggs, one at a time, followed by vegetable oil, buttermilk, lemon zest, lemon juice, and vanilla extract.

5️⃣ Gradually add the flour mixture to the butter mixture, mixing until just combined.
