The baked San Giuseppe zeppole are the light but equally delicious variant of the classic fried zeppole. Traditionally prepared on March 19, Father’s Day , just like the famous sweetsCandies a> Campani, they are filled with vanilla custard, fruit in syrup and a barely noticeable layer of powdered sugar, but compared to the original recipe they contain a mixture richer in eggs and butter, so that the pastry remains soft and fluffy even after baking.
To prepare them we start with the more “consistent” choux pastry, made as in school with butter, water and flour and then add the eggs one by one, away from the heat. Then the mixture is poured into a piping bag and finally many micro-perforated silicone mats are placed on a baking sheet covered with a > Sour cherries in syrup .
