Ace Cake: the recipe for the soft and fragrant dessert

The Ace cake is a soft, genuine and citrus-scented dessert, perfect for breakfast or as a snack for adults and children: one slice after another sells like hotcakes, literally, because it is so good and light. To prepare this very simple recipe, use the peel and juice of two oranges and a lemon ; to obtain the orange color, just mix the carrots with the sunflower seed oil.
A very quick preparation because after beating the eggs with the sugar, all the other ingredients are added and only at the end are they mixed with an electric whisk.
Cooking, however, requires a little more patience: since the cake has a very moist consistency, it needs at least 45 minutes to dry; however, we recommend monitoring the cooking process after about 40 minutes with a toothpick, which should come out dry and without any dough residue.
The Ace cake takes its name from the vitamins A , C and E contained in citrus fruits and carrots , and is reminiscent of the well-known multivitamin fruit juice that we all love.
We used a donut mold , but you can also use a round cake mold without a hole or smaller muffin molds: this way you get delicious single-portion cakes (although they will take less time to bake).
Regardless of the mold, the Ace cake does not lose its soft texture and delicate flavor that characterize it. If you like, you can season the dough with cinnamon, vanilla or cardamom and refine the dough with chocolate chips or almond flakes.
