Ingredients:

3 potatoes, peeled and diced
2 glasses of water (about 500 ml)
1 onion, finely chopped
3 garlic cloves, minced
A bunch of cilantro and parsley, chopped
1/2 teaspoon chili flakes (optional)
1.5 cups semolina
Salt to taste
Vegetable oil for frying

Instructions:

Boil the potatoes:
Place the diced potatoes in a saucepan and add 2 glasses of water. Bring to a boil and cook until the potatoes are tender but still firm to the bite. Drain the water and set the potatoes aside to cool.
Prepare the onion-garlic mixture:
Heat a moderate amount of vegetable oil in a frying pan over medium heat. Add the finely chopped onion and minced garlic. Fry until golden brown and give off a fragrant aroma. This usually takes about 5-7 minutes.
Season the potatoes:
Add the drained potatoes to the pan with the onion and garlic. Season with salt and chili flakes (if using). Stir well and make sure the potatoes are evenly coated with the spices and onion-garlic mixture.
