Plum cake with jam: the recipe for a soft and delicious dessert from the cupboard

Ingredients

00 flour 300 gr

Berry jam 250 gr

Icing sugar 180 gr

Whole yogurt 125 gr

Corn oil 110 ml

Baking powder for cakes 16 gr

Egg 3

Untreated lemon 1

The jam plum cake is the richest and tastiest variation of the classic yogurt plum cake. A simple and authentic dessert that, when cut, reveals a creamy heart of berry jam, ideal for breakfast and as a snack for adults and children.

To prepare it at home, simply beat the eggs with the sugar until you get a light and fluffy mass, then add all the white yogurt, the seed oil and the flour, mix with the baking powder and season everything with the grated sugar and the zest of an unwaxed lemon.

Now you just have to pour half of the mixture into a well-greased rectangular mold, spread a generous layer of berry jam in the center and finally pour in the remaining mixture, smoothing the surface well with a spatula.

Baking in a hot oven at 170 °C for about 40 minutes will then do the rest and you will have a fragrant and delicious cake that can also be served as a happy ending to the meal with a light sprinkling of icing sugar.

If you wish, you can cover the plum cake with a lemon glaze, a dark chocolate glaze or with crunchy sugar grains, replace the berry jam with a fig, peach or apricot jam, or opt for the filling with a hazelnut spread or a pastry enriched with fresh strawberry slices.

If you want, you can flavor the dessert not only with the grated lemon peel, but also with a pinch of cinnamon or the seeds of a vanilla pod, or give it a pleasant alcoholic note with a drop of limoncello: provided that there are no children.
