Norwegian carrot cake

Ingredients :

4 egg(s)
3 dl Sugar
3 dl Flour
½ Orange(s), organic, the abrasion of it
2 Tea spoons baking powder
1 tbsp Cinnamon powder
1 teaspoon vanilla sugar
5 tbsp oil, or melted butter
3 big ones Carrot(s), finely grated
For the glaze:
3 tbsp butter, melted
300g powdered sugar
1 teaspoon vanilla sugar
250 g cream cheese

preparation

Preheat oven to 180 degrees fan.
Mix the eggs and sugar well into a white and creamy mixture.
Then mix the flour, cinnamon, vanilla sugar and baking powder. Stir in well. Add the melted butter/oil, finely grated carrots and
orange peel. Mix everything again. Pour the dough into a greased round pan and let the cake bake for 45-55 minutes. If the cake gets too brown, maybe put aluminum foil over it. Remove the cake from the oven and the pan and let it cool on a baking rack. If necessary, place a towel over it and only start with the icing when the cake has cooled completely.
